
It’s simple sustenance. And it’s a tradition on Good Friday for the family of Father Jim Sabak, O.F.M. Six different kinds of pastas are used to remind people of six wounds of Christ. And chefs of all ages are invited to break a beloved kitchen rule by breaking the bucatini.
Ingredients
2 cups grated parmesan cheese
8 eggs
3/4 cup canola oil
Black pepper
Between ½ cup and ¾ cup each of mezzi rigatoni, gemelli, orecchiette, bucatini, ditalini and fusilli (or your favorite pastas)
Grate cheese into a medium bowl. Crack eggs into a large bowl. Add cheese, canola oil, and pepper into the large bowl that holds the eggs.
Cook pasta till it’s al dente, following the directions on the box. Once it’s ready, drain pasta and return it to the pot. Add the egg mixture and blend well. Grease a square baking dish and add the contents of the pot to the baking dish. Bake at 350 degrees for about 45 minutes. Look for the top to be crusty and light brown and for the mixture to have set. Cut into square pieces and serve.
